THE Chocolate Chip Cookie
A baker needs three go-to recipes. A cookie recipe, a cake recipe and a signature recipe. This is their recipe (whether original or not) that when asked for a recommendation, they are able to hand over. My signature recipe is my trio cookies (blog post coming soon!) and my cake recipe is my heroes cupcakes (Cadbury's Heroes Cupcakes ) however, when it comes to cookies, I'm more picky. I am a cookie baker by nature - it's my "thing" and where most of my baking skills lie but everything still leads back to the perfect simple chocolate chip cookie. I have multiple chocolate chip cookie recipes on my blog as there's a million and one ways to make them however this is my new favourite. The perfect cookie can be crispy or chewy, softer or crumblier. It can melt in your mouth snap at a slight glance. It can have milk, white or dark chocolate (or all 3) and the centre can be filled or simply not. The perfect cookie is primarily how you want it. This is my current favourite. I'm a sucker for a chewy melt in the mouth cookie. A levain NYC style is more my kind of cookie. I tend to do the "tap and crack" method when I cook them, which is essentially tapping the tray when they are half bake so they crack as they cook leading to a wider softer cookie. I also do a mix of all three chocolate. I only recently started using chocolate not chocolate chips as I learnt that chocolate chips are made not to melt and I like a melt in the mouth chunk of chocolate when I bite into a cookie. I also like the chaos of not knowing what size piece of chocolate you are going to get! This recipe is THE recipe. It the perfect chocolate chip cookie to solve all your chocolate chip cookie problems and I know you'll love it as much as I do!
Here is my recipe for THE Chocolate Chip Cookie:
Ingredients: (Makes 12) - total cost: £0.26 per cookie
- 125g Butter, softened (£0.95)
- 100g Brown Sugar (£0.20)
- 75g Caster Sugar (£0.11)
- 1 Egg (£0.08)
- 1tsp Vanilla Extract (£0.10)
- 300g Plain Flour (£0.16)
- 1.5tsp Baking Powder (£0.02)
- 1/2tsp Baking Soda (£0.01)
- 1/2tsp Salt (0.01)
- 300g Chocolate of your choice (I do a combo), chopped (£1.47)
- Preheat the oven to 180'c, gas mark 4
- In a large bowl, cream together the sugar and butter
- Whisk in the egg and vanilla and continue to stir until all the lumps have gone
- In a separate bowl, mix with a fork: the flour, baking soda, baking powder, and salt
- Add the flour mixture into the butter mixture a few spoonfuls at a time until fully combined
- Chop up your chocolate and alternate between adding the chocolate and the flour mixture (this ensures all the chocolate gets mixed in properly)
- Cling-wrap the dough and leave in the fridge for 20/30 minutes
- Roll the dough into 12 equal balls (they should be about 80g each) and press firmly onto 2 greased baking trays - the cookies spread so have no more than 6 per tray
- Bake for 5 minutes before gently tapping the trays on the side of the oven (this helps the cookies spread and is a fun anger release!)
- Bake for a further 5-7 minutes based on how chewy you like your cookies
