Honey Biscuits
I've always had a big sweet tooth likely because, as a baker, it is probably in my nature to like sweet things! Whilst I am a fan of candy floss, white chocolate and of course EatTeen by Lottie: Simple Sugar Shortbread I also love a more natural sweet taste, mainly from berries but also from honey. There is something different about honey in baking compared to sugar as although it provides a wonderful sweet taste, I find it also alters the texture making the perfect chewy biscuit or moist cake. I love using honey in baking and I find it "knows what to do!" meaning honey just knows how to fix a recipe or simply improve it slightly. My dad is a massive fan of honey and I often spend hours looking for the correct honey to use in my baking so that I don't accidentally use his expensive jar from half way across the world! (In baking, I find with products such as honey using a cheaper supermarket own brand one is still perfect and doesn't ever influence the taste or texture anyway!) I originally came up with this recipe for the Jewish new year, Rosh Hashanah, however it is a recipe I know baking much more than annually as it is widely enjoyed by my family and friends. These biscuits are the perfect blend of sweet, chewy yet still crunchy and of course delicious. I hope you love this recipe as much as my family all do!
Here is my recipe for Honey Biscuits:
Ingredients: (Makes 24)
- 320g Plain Flour
- 2tsp Baking Powder
- 1tsp Cinnamon
- 1tsp Ginger
- 1 Egg
- 100g Caster Sugar
- 75g Brown Sugar
- 170g Butter, softened
- 120g Honey (any type will work fine but I would normally opt for a cheap supermarket brand as I don't see the point in wasting an expensive one if you are not eating it fresh!)
- 1tsp Vanilla/Almond Extract
- Granulated Sugar, For coating
- Preheat the oven to 175’c, gas mark 4
- In a small bowl, mix the flour, baking powder, cinnamon and ginger. Set aside
- In a new larger bowl, mix the egg and both sugars until combined
- Add the butter to the sugar mixture and continue to mix
- Add the honey and vanilla to the sugar mixture and mix until fully combined
- Add the flour mixture to you sugar mixture and mix well until a cookie dough forms
- Roll the dough into 24 equal sized balls and roll them in the granulated sugar
- Place on a baking sheet about 2-3cm apart (they will spread)
- Baking for 10 12 minutes
