Simple Sugar Shortbread
Every baker is known for something. Initially it is "biscuits, cake, bread or pastry." Then you go into the specifics! Mine has always been biscuits. Although I've generally baked biscuits and cake, I get much more pleasure from baking biscuits as I find when giving them to my friends and family they are easier to distribute as well as fit perfectly into the category of "less is more." With cakes, in order for them to look "perfect" they have to be iced, decorated and basically just look OTT. However with biscuits, I have always found that sometimes the simplest biscuits look (and of course taste) the best hence why they are my favourite bake. Now into the specifics! Within the biscuit category, everyone who has tried my bakes would definitely say my forte is shortbread. I often send my parents to work or bring to school large boxes of shortbreads for various occasions and the feedback I get is always positive. Therefore, I wanted to share my famous shortbread recipe with everyone so you can see how simple it really is and to proof that sometimes less really is more. This simple recipe is definitely a "Lottie favourite" so I hope it brings you as much joy baking, shaping and trying these wonderful biscuits as it does for my family and friends!
Here is my recipe for Simple Sugar Shortbreads:
Ingredients: (Makes 15-30 depending on the size of your cookie cutters)
- 200g Unsalted Butter, softened
- 100g Caster Sugar
- 350g Plain Flour
- Sprinkles & Chocolate Chips to decorate (optional but recommended!)
Method:
- Preheat the oven to 175’c, gas mark 4
- In a large bowl, cream the butter and sugar until smooth
- Sift in the flour and fold in until a rollable dough forms.
- Lightly dust you work-surface and rolling pin with flour then roll out the dough until it is about a 1/2cm thick
- Using your favourite cookie cutters, cut out your shortbreads and place on a greased tray (they shouldn't spread but still place them slightly apart!)
- Bake for 8-10 minutes depending on the size of your cookies - larger shapes will take longer to cook through!
