Blueberry Muffin Baked Oats
At the moment I am revising for my A levels which I am taking in May and June. In order to keep me going, I like to make myself healthy, filling and of course tasty meals, especially breakfast to give me the boost to start the day's revision on a high. My mum has been encouraging me to eat lots of "brain foods" and due to me not fancying liver (I don't feel the need to justify this!) I have been set on eating lots of blueberries. Don't get me wrong, I love all berries but blueberries do get pretty boring after a while. Because of this, I have been having fun trying out new blueberry based recipes (definitely not procrastination!). I'd say I've now tired out my blueberry muffin recipe EatTeen by Lottie: Blueberry Muffins so thought I would move on to my favourite breakfast: baked oats! I'm always careful with putting fruit in my oats as I don't like them too soggy so I knew making the perfect blueberry muffin baked oats would be a challenge. However. I succeeded! My blueberry muffin baked oats recipe is, without a doubt, my favourite baked oats recipe as, to me, it tastes like one giant blueberry muffin- and who doesn't love blueberry muffins! I hope this recipe gives your brain a big boost for the long working day ahead and you enjoy it as much as I do!
Here is my recipe for Blueberry Muffin Baked Oats:
Ingredients: (Serves 1)
- 50g Banana (about half)
- 40g Rolled Oats
- 15g Vanilla/Salted Caramel Protein Powder (this can be substituted for more oats)
- 1/2tsp Baking Powder
- 100ml Almond Milk (any milk will work!)
- 1tsp Cinnamon
- 1tsp Vanilla/Almond Extract
- Blueberries (I you don't have any blueberries, the blueberry jam or any other berries also work perfectly!)
Method:
- Preheat the oven to 175’c, gas mark 4
- In a blender, (I use a Nutri-Bullet), blend the banana, oats, protein powder, baking powder, milk, cinnamon and vanilla until a smooth cake battery texture forms
- Pour into an oven safe ramekin (I use a mini skillet pan!) and sprinkle with your blueberries
- Bake for 20-25 minutes depending on how well done you like your oats
- Enjoy!!
