Chewy Chocolate Oatmeal Cookies

Heya,

I hate raisins! (yes this is a valid opening statement). But not because I dont like the taste, primarily because I find them disappointing. If I see them in a cookie or scone, I assume they are chocolate chips so they are always disappointing. Same issue when I buy a sandwich and there's butter in it - I expect cream cheese! (queue the judgement, from mainly my mum). Because of my raisin disappointment dislike, I wouldn't normally opt for an oatmeal cookie from a bakery as they are normally oatmeal & raisin. However, I do love oatmeal cookies. The nuttiness from the oats combined with the chewy texture makes them a delectable treat. I've been playing with recipes for a few years as, due to the difference in texture, raisins cannot simply be replaced with chocolate. However, I recently stumbled across this one. It is comprised off an instagram recipe however I've altered it slightly to meet my preferences. Despite it being a first time, these biscuits were a success from the get-go to the point where my brother started eating them before I got the chance to take a photo (luckily my dad got a picture). I'm not upset though as they came out exactly as I wanted. The recipe is cheap, simple and of course delicious and a perfect alternative to my fellow raisin haters. I hope you love them as much as I hate raisin disappointment!

 

Here is my recipe for Chewy Chocolate Oatmeal Cookies


Ingredients: (Makes 12) - total cost: £0.15 per cookie 

  • 85g Butter, softened (£0.64)
  • 75g Brown Sugar (£0.15)
  • 50g Caster Sugar (£0.07)
  • 1 Egg (£0.08)
  • 1tsp Vanilla Extract (£0.10)
  • 110g Plain Flour (£0.06)
  • 3/4tsp Baking Soda (£0.01)
  • 1/4tsp Salt (£0.01)
  • 87g Rolled Oats (£0.08)
  • 65g White Chocolate (£0.32)
  • 65g Dark Chocolate (£0.32)
Method:

  1. Preheat the oven to 180'c, gas mark 4
  2. In a large bowl, cream together the sugar and butter
  3. Whisk in the egg and vanilla and continue to stir until all the lumps have gone
  4. In a separate bowl, mix with a fork: the flour, oats, baking powder, and salt
  5. Add the flour mixture into the butter mixture a few spoonfuls at a time until fully combined
  6. Add in your chopped chocolate using a spatula to ensure its added properly to the mixture
  7. Cling-wrap the dough and leave in the fridge for 20/30 minutes
  8. Roll the dough into 12 equal balls and press firmly onto 2 greased baking trays - the cookies spread so have no more than 6 per tray
  9. Bake for 5 minutes before gently tapping the trays on the side of the oven (this helps the cookies spread and is a fun anger release!)
  10. Bake for a further 5-7 minutes based on how chewy you like your cookies
