3-Ingredient Ice Cream Cake

When we were in lockdown 1, as COVID started to dip my family had a habit of meeting people on their driveways in order to continue socialising without breaking any rules. One of our friends was telling me about a cake he had starting making and to say I was intrigued was an understatement. He was using ice cream as the primary ingredient to create one of the best textured cakes I had ever tried. Although I've tried ice cream as an ingredient for cake before, I've never done only 3 ingredients so instantly got to work playing around with the recipe. Its fair to say I've never made this recipe badly and aside one rather strangely tasting batch using strawberry sorbet, I've found almost every flavour of ice cream works. When I explained this recipe to my friend (she can't eat egg so this was perfect for her!) she was unsure about what ice-cream to use as of course there was such a wide range and she wanted one that would work best. In order to get the perfect combination of flavours I normally opt for a tub with multiple flavours combined and therefore wanted to share my top 10 ice cream choices for this recipe although, as much as I keep stressing this, any flavour (of ice cream not sorbet) will likely work. The recipe itself is quick, simple, mess free, cheap to make and of course delicious. It caters for most dietary requirements, as many substitutions work well, so everyone can enjoy this delicious bake. Here is my recipe for 3-Ingredient Ice Cream Bread:


Ingredients: (Serves 6-8)

  • 1 tubs (473ml) Ice Cream, melted until totally liquid
  • 150g Self-Rising Flour
  • 1tsp Vanilla/Almond Extract
  • Sprinkles/Chocolate Chips (optional but recommended for an extra burst of flavour and colour!)

Method:

  1. Preheat the oven to 180'c, gas mark 4
  2. In a large bowl, whisk the melted ice cream until bubbly and slightly thicker-this well make sense when you start to whisk!
  3. Add the vanilla and flour and continue to mix
  4. Fold in the sprinkles and pour into a loaf tin
  5. Bake for 15-18 minutes
  6. Enjoy!!
