Muffin Head Cookies

Heya,

When it came to food choices me and my brother differed greatly when we were younger. I'm not talking about him liking sweet and me liking savoury. I'm talking incredibly specific differences. I only ate egg yolk whereas he would only eat the white. I like cake and he liked icing. I liked desserts basically raw and gooey whilst he liked them cooked and crispy. You get the picture! When it came to cupcakes, I've always preferred the heads! I know most people can't really tell the difference between the top and the bottom of the cake but I love the texture of a muffin head and often find the base too dry. I thought I'd recreate the best part of the muffin but in cookie form. Not quite a brookie as more cake like than cookie like. My friends always think these biscuits look like little toadstools and honestly, I don't disagree so I always like to have a bit of fun and decorate them like the little mushrooms they look so identical to! They therefore, of course, have to be red velvet, my favourite! This recipe is super easy yet super effective and is a great centre piece at a children's party- just place a marshmallow underneath each muffin head and you have the perfect (non poisonous!) toadstool. I hope you and your family love this recipe as much as we all do!


Here is my recipe for Muffin Head Cookies:


Ingredients: (Makes 20)

  • 225g Plain Flour
  • 25g Cocoa Powder/Hot Chocolate Powder
  • 1tsp Baking Soda
  • 115g Butter, softened
  • 125g Brown Sugar
  • 30g Caster Sugar
  • 1 Egg
  • 1tbs Milk (I use Oat)
  • 2tsp Vanilla/Almond Extract
  • Red Food Colouring
  • handful of White Chocolate Chips (optional but recommended!)

Method:

  1. Preheat the oven to 175’c, gas mark 4
  2. In a small bowl, mix the flour, cocoa powder and soda and set aside
  3. In a larger bowl, cream together the butter and both sugars
  4. Add the egg, milk and vanilla to the butter mixture and continue to mix
  5. Add enough red food colouring to the butter mixture so that a deep blood red colour appears (the colour prior to adding the flour mixture needs to be darker than the red colour you want)
  6. Pour the flour mixture into the butter mixture and mix until a dough forms
  7. Roll into balls and place them about 2-3cm apart (they will spread slightly) on a grease-proof tray
  8. Add the chocolate chips individually around the dough balls so they look like toad stools!
  9. Bake for 10-12 minutes
  10. Enjoy!!
