Lottie's Vegan Mango Lassi
Lassi, for me, is an interesting drink as I have a history! traditionally, lassi is an Indian drink made with yoghurt. I love lassi, the sweet yet smooth texture really hits the spot for me however it is also a strong shot of lactose which I just can't tolerate! I initially found out I was intolerant to lactose after almost fainting in a restaurant after having a mango lassi. I had a similar experience at an afternoon tea so my mum made the connection and we decided it was due to lactose. Because of this I can no longer have lassi when I am out so I knew I had to try and recreate my own! After doing some experimenting I found that lassi is not made from fresh mango but actually mango purée to get that slightly sweeter taste. After finding out where to buy mango purée (which was surprisingly difficult!) I got to work experimenting with various yoghurts, sweetening ingredients and spices to make the perfect VEGAN mango lassi. Finally I came up with this recipe which is the perfect alternative to regular lassi and can be made into ice lollies with the leftover mixture (annoyingly you can't buy the purée in tins smaller than 850g) by simply pouring it into ice lolly moulds and leaving it in the freezer for 12 hours. Here is my recipe for Lottie's Vegan Mango Lassi:
Ingredients: (Serves 10-12)
- 1 tin (850g) Mango Purée/Pulp
- 250g Plain Unsweetened Vegan Yoghurt (you can use sweetened but the purée already gives it the sweetness kick!)
- 1tsp Vanilla Extract
- 100-500ml Water (depending on how thick you like the lassi!)
- 1/4tsp Cinnamon (optional but recommended!)
Method:
- In a strong blender, (I use a Vitamix) blend all your ingredients together
- Serve fresh or store in the fridge (its as simple as that!)
- To make into mango sorbet ice lollies, pour the mixture evenly into ice lolly moulds
- Freeze for at least 12 hours
- Enjoy!!
