Flourless Marshmallow Cookies

Heya,

Passover, the Jewish festival honouring the story of Exodus, is this Friday night. One of the main customs surrounding the festival is to not eat foods containing flour such as bread and pasta. I have always celebrated this festival with my family in Israel, however, since the pandemic we have celebrated the festival at home with friends. I have therefore only recently started baking passover friendly foods! Traditional desserts include: coconut macaroons, chocolate mousse and meringues as these are desserts that naturally don't have flour. Nevertheless, I wanted to create my own set of passover friendly recipes that are based around some of my favourite tastes and bakes. Although I am INCREDIBLY anti-diet culture, I have based some of my bakes around keto (carb-free) recipes as they also have no flour however substitute sweeteners for normal sugar and of course adapt the recipes so they actually taste nice! I came up with my first passover recipe that I have chosen to post in the pandemic as part of a challenge within my community. The recipe uses one of my favourite sweet treats: marshmallows and is naturally flourless (meaning I don't have to substitute for something such as almond flour). This recipe is an all time favourite in my house and has become one of my passover traditions. It was even featured on Dr Alex's (from Love Island) instagram story as he was so impressed by my recipe! Here is my recipe for Flourless Marshmallow Cookies:


Ingredients: (Makes 12)

  • 325g Icing Sugar
  • 90g Cocoa Powder/Hot Chocolate Powder
  • 3 Egg Whites (about 125g)
  • 1tbs Vanilla/Almond Extract
  • 1 cup Mini Marshmallows (you can also use large marshmallows cut up)
  • Chocolate Chips, optional but recommended!
Method:
  1. Preheat the oven to 175’c, gas mark 4
  2. In a large bowl, whisk up the egg whites and vanilla until firm- you should be able to hold the bowl above your head and not get covered in egg white!
  3. lightly dust the cocoa powder and icing sugar into the mixture and continue to whisk- DON'T add it all at once as you will "break" the egg whites fluffiness!
  4. Fold the marshmallows (and chocolate chips) gently into the mixture
  5. Using an ice cream scoop, gently place the batter/dough onto baking trays 2cm apart (they do spread)
  6. Bake for 12-15 minutes
  7. Enjoy!!
