Crispy Crunchy Chocolate Chip Cookies
"What makes the perfect chocolate chip cookie?" a question I hear frequently as a baker. Chocolate chip cookies are one of the most simple bakes yet I can almost guarantee that every baker has their own unique recipe. I have 3! The reason for this is because I personally find a variation of chocolate chip cookie style recipes to all be amazing. So much so that out of the 3 recipes I am only going to publish 1 on my blog- these ones! This is definitely my brother's favourite of my 3 chocolate chip cookie recipes, mainly because they are ginormous, but also because he prefers a thin crunchier style of biscuit (like my mum) whereas I prefer a soft chewier one (like my dad). This recipe makes the perfect batch of cookies in under 30 minutes and is super duper easy as well as has so much potential. I love varying the recipe slightly every time such as by altering the flavour of chocolate chip or even how long they are cooked for as even a minute can totally alter the texture of the bake. My only tip for this recipe, to ensure you don't go wrong, is to use grease-proof paper on your baking trays, otherwise you will spend an unnecessary large amount of time trying to get them off with a spatula (I know from experience!) I hope this recipe brings you so much joy and I can promise you it is the best chocolate chip cookie recipe one can find!
Here is my recipe for Crispy Crunchy Chocolate Chip Cookies:
Ingredients: (Makes 10)
- 120g Plain Flour
- 3/4tsp Baking Soda
- 115g Butter, softened
- 125g Brown Sugar (for chewiness!)
- 20g Caster Sugar (for crispiness!)
- 1 Egg
- 1/2tbs Vanilla/Almond Extract
- 75g Chocolate Chips (I use a mix of milk and dark)
Method:
- Preheat the oven to 175’c, gas mark 4
- In a large bowl, cream the butter and both sugars until smooth
- Add the egg and vanilla and continue to mix
- Sift in the flour and fold in gently until just combined
- Mix in your chocolate chips
- Using an ice-cream scoop, make 10 equal balls of dough and place on 2 grease-proof baking trays at least 3cm apart (they will spread A LOT)
- Bake for 8-10 minutes depending how well done you like your cookies
