Cookies & Cream Cupcakes

Heya,

When you are in a foodie family, such as mine, where everything is homemade or "OTT" when it comes to meals and snacks, many assume I only really eat "proper" food and treats. However this is wrong! Like my brother and his Reeses Cups, my mum and her Dairy Milk Buttons or my dad and his Nobly Bobbly Ice Lollies, I love Oreos. Although, I do enjoy some of my fresh homemade cookies, I get a lot of pleasure from the simplicity of an Oreo cookie or the general flavour of cookie and cream in desserts such as ice cream- ever since I was younger cookie and cream has always been my go to flavour (or kinder bueno if it is available)! Because of this, I love cookie with Oreos as I find they are a sure-fire, easy way to get the perfect flavour and design to cookies and cakes. When it comes to cakes specifically, deconstructing the Oreos in order to get the best out of the cookies and cream really does the trick and for me this recipe is a no-brainer as not only do they taste amazing, but their simple design is so effective. I hope you love this recipe as much as I do!


Here is my recipe for Cookies & Cream Cupcakes:


Ingredients: (Makes 12)

  • 125g Butter, softened
  • 120g Caster Sugar
  • 2tsp Vanilla/Almond Extract
  • 2 Eggs
  • 125g Self-Rising Flour
  • 16 Oreos Cookies only*, crushed (the Oreo cream is used in the icing!)
For the Oreo Buttercream: 
  • 140g Butter
  • 285g Icing Sugar
  • *16 Oreo Icings (the fillings from the cookies used in the cake batter!)
  • 1/4tsp Vanilla/Almond Extract
  • 2-4tsp Milk- to get the desired pipable consistency
  • 12 Oreos, to decorate (optional but recommended!)

Method:

  1. Preheat the oven to 180'c, gas mark 4
  2. In a large bowl, whisk together the butter and sugar until fully combined
  3. Add the vanilla and eggs and continue to mix
  4. Fold in the oreo cookies and flour until fully combined
  5. Pour evenly into 12 cupcake cases 
  6. Bake for 18-20 minutes
  7. Whilst the cupcakes are cooling, make the buttercream by whisking the butter, Oreo icings, sugar and vanilla until thick- add milk if too thick and more icing sugar if too thin
  8. When the cakes are cooled fully- Pipe the icing onto them using a 1A nozzle (large rounded end) 
  9. Place and Oreo/Oreo half on top of each cupcake
  10. Enjoy!!
