Carrot Cake Baked Oats
In case you haven't noticed by now I love breakfast. Breakfast is without a doubt my favourite meal of the day and definitely the meal I put the most time into! One of my more recent loves is baked oats- I mean who wouldn't want basically cake for breakfast! As I love carrot cake and we had some old carrots lying around, I thought I would experiment with making my baked oats carrot cake flavoured (much to my brothers horror). The most important aspect of this recipe is to grate the carrots incredibly finely in order to remove their chunky vegetable texture and incorporate into them the wonderful carrot cake flavour. And of course no carrot cake is complete without cream cheese frosting. I tend to keep the frosting recipe relatively simple as I don't like it overly sweet and it works absolutely perfectly. Providing you don't add too much spice (especially cinnamon!) you cannot really go wrong with this recipe and it is one of the best ways to start the morning. I hope this recipe gives you as much joy as it gives me.
Here is my recipe for a Carrot Cake Baked Oats:
Ingredients: (Makes 1)
- 40g Rolled Oats
- 20g Caramel Protein Powder (this can be substituted for another 20g of oats and will still work perfectly!)
- 50g Carrots, grated VERY finely (I always use the smallest holed side of my cheese grater)
- 40g Plain Yoghurt
- 35g Egg White
- 1/2tsp Almond/Vanilla Extract
- 80g Water/Milk (I normally use water but both work)
- 1/2tsp Cinnamon
- 1/2tsp Nutmeg
- 1/2tsp Baking Powder
- 30g Plain Yoghurt
- 5g Cream Cheese
- 1/4tsp Vanilla/Almond Extract
Method:
- Preheat the oven to 175'c, gas mark 4
- In a medium sized bowl, mix the oats, protein powder, carrots, egg white, yoghurt, almond extract, water, spices and baking powder until fully combined (essentially everything except the cream cheese frosting ingredients!)
- poor into an oven safe ramekin and bake for 16-18 minutes depending on how well done you like your oats
- in a small glass to make the cream cheese frosting, mix the remaining ingredients until fully combined
- As soon as the oats are out the oven, spread the frosting onto your oats and serve nice and hot
