Baked Vanilla Donuts
In lockdown I had a habit of making amazon purchases, which my parents would class as: "a total waste of money!" However, this wasn't the typical mass of clothes and shoes orders one would normally expect of me (In lockdown I lived in my pyjamas anyway!) but random baking equipment to experiment with. Alongside, the various measuring equipment, specially shaped spatulas and even some professional piping bags I bought donut moulds. Although original fried donuts don't require a mould, baked donuts require a very specific shape in order to get that perfect torus shape. As I don't have a deep fryer (another purchase I would like to make in the future!) I thought I would experiment with baked donuts which have more of a cake-like texture. The recipe itself is relatively straightforward once you buy the moulds, however they look and taste insane! I hope this recipe brings you so much joy as it does for my family and I!
Here is my recipe for Baked Vanilla Donuts:
Ingredients: (Makes 12)
- 160g Plain Flour
- 125g Caster Sugar
- 1tsp Baking Soda
- 120g Butter, melted
- 120ml Milk (I use Oat or Skimmed depending on who I am catering for!)
- 1 Egg
- 1 Egg Yolk
- 1tsp Vanilla Extract
- 100g Butter
- 150g Cream Cheese
- 300g Icing Sugar (the icing recipe measurements will vary depending on the sort of texture you like your icing!)
- Silver Sprinkles to decorate, (optional but recommended!)
Method:
- Preheat the oven to 175’c, gas mark 4
- In a large bowl, mix the flour, sugar and soda
- Whisk in the melted butter and milk until a cake batter like texture forms
- Add the egg, egg yolk and vanilla and continue to whisk
- Pour your batter evenly into 12 silicon donut moulds (make sure they have been greased EXCEPTIONALLY well!)
- Bake for 8-10 minutes
- Whilst the donuts are in the oven, make the icing by mixing the butter, cream cheese and icing sugar in a bowl until fully combined.
- If the icing is too stiff add water or milk in small quantities until you get your desired texture
- Leave the donuts to cool for at least half an hour
- Remove the donuts from the moulds carefully and dip them in your icing until approximately half of the surface area is covered in icing
- Sprinkle the donuts with your silver balls or any sprinkles of your choosing
