4 Ingredient Peanut Butter Cookies

Heya,

I'm sure I have mentioned before but my brother loves peanut butter. And I don't just mean likes. If given the opportunity to make all his meals they would likely all be peanut butter bagels or peanut butter on waffles (slight variation in the carbohydrate I guess!). I'm not really sure why he loves it so much as I personally find it too dry however, I like to keep my food critics happy so often look for recipes with peanut butter. I saw a recent trend on Tiktok at the start of the pandemic based on a viral audio clip for a recipe for peanut butter cookies. I thought I'd experiment with it and have since created this mouthwatering recipe comprised of ingredients you are 100% likely to have lying around. This recipe has become so popular within my family that I barely got a chance to take a photo of my bake before they were all devoured! (hence the poor quality photograph) One of my favourite things about this recipe is its adaptability. I love baking for my friends at school but annoyingly cannot use peanut butter because of allergies but have since found I can alter the spread to something else and comprise a completely new cookie! Its fair to say my "4 Ingredient Biscoff Spread Cookies" were also incredibly popular and all I had to do was alter one ingredient. I hope this recipe brings you as much joy as it brings my family 


Here is my recipe for 4 Ingredient Peanut Butter Cookies:


Ingredients: (Makes 12)

  • 240g Peanut Butter, melted -this can be substituted for any spread of a similar texture such as Nutella or Biscoff Spread however NOT something like Jam!
  • 180g Brown Sugar
  • 1 Egg
  • 1tsp Vanilla Extract
  • 1tsp Baking Soda
  • A handful of Chocolate Chips (optional but recommended!)

Method:

  1. Preheat the oven to 175’c, gas mark 4
  2. In a large bowl, mix the peanut butter and sugar
  3. Add the egg, vanilla and soda and continue to stir
  4. Place the dough on 2 baking trays about 2cm apart as they will spread!
  5. Make a criss-cross pattern using a fork and place the chocolate chips in each corner of the criss-cross.
  6. Bake for 8-10 minutes
  7. Enjoy!!
