4-Ingredient Matzah Rocky Road
I spent second night seder this year with some of our closest family friends so I wanted to make a passover friendly dessert for everyone to enjoy. This was actually a lot harder than expected as catering for 20 people including allergies, dietary requirements and of course being passover friendly provided a challenge. For something such as rocky road, my passover speciality, I prefer not to substitute ingredients as I find with uncooked recipes, subs just don't work! Therefore I thought I would keep it simple as generally with rocky road "less is more!" I personally find rocky road loaded with biscuits overpoweringly sweet therefore controversially prefer my passover friendly version. The recipe itself caters for everyone as it is vegan and passover friendly as well as simple, cheap and quick to make. Although mini marshmallows are preferable, the recipe works with larger ones as well and it just as tasty. With rocky road, I always find once you have the basic ingredients- you can't really go wrong- its basically flawless and a perfect recipe to make with the whole family. The recipe can be made as single serves or as a pan of the delicious dessert depending on who and how many people you are catering for. It is the perfect recipe for every occasion and I hope you love it as much as my family and friends do.
Here is my recipe for 4- Ingredient Matzah Rocky Road:
Ingredients: (Serves 12-16)
- 3 sheets Matzah, broken into a similar size to the marshmallows
- 260g Semi-Sweet Chocolate Chips (you can use any chocolate chips but I find the semi-sweet work best)
- 75g Honey/Golden Syrup
- 1/2tsp Almond Extract
- 75-100g Mini Marshmallows
- Sprinkles
- More Chocolate Chips
- Chewy Sweets (my brother likes this)
- (Anything you think will taste nice probably will!)
Method:
- In a large bowl, melt the chocolate chips, until liquid, in the microwave
- Stir in the honey and almond extract
- gradually add in you matzah, marshmallows and any add ins then mix until fully combined
- Place in a fridge-safe baking tray or cupcake cases and leave for at least 2 hours
- Enjoy!!
