Chocolate Biscotti

Heya,

One thing I get a lot of pleasure from when baking is other people's enjoyment. I love baking for my friends and family and letting them criticise and compliment my baking so I can make it as tasty as possible. Everyone's taste buds are different so I can't primarily rely on myself to improve bakes. My brother is definitely my biggest critic! Every time I bake he'll say "it's too sweet" or "there's too much of X and Y" and I love that! Honesty is the most important thing in baking otherwise recipes will never improve. My brother has always had a sweet tooth but has some "anomalous" bakes that he also loves. I've always found it rather strange that he like my biscotti as he constantly complains that recipes are "too rich" and I personally find the biscotti themselves quite rich. However, him and my mum really like this recipe and often request these when I am being indecisive about what to bake. I hope this recipe brings you and your family as much joy as it brings mine!


Here is my recipe for Chocolate Biscotti:


Ingredients: (Makes 25)

  • 170g Plain Flour
  • 85g Cocoa Powder
  • 1tsp Baking Soda
  • 170g Neutral Oil (Sunflower or Canola works best!)
  • 110g Caster Sugar
  • 110g Butter, softened
  • 1 Egg
  • 75-100g Chocolate Chips (depending on how many you like!)

Method:

  1. Preheat the oven to 175’c, gas mark 4
  2. In a small bowl, mix the flour, cocoa and baking soda and set aside
  3. In a different larger bowl, mix the oil sugar and butter and mix until fully combined
  4. Stir the egg into the butter mixture and continue to stir.
  5. Add your flour mixture into the butter mixture and mix well
  6. Fold in the chocolate chips but don't over mix- I have found the oil will be "squeezed out" if you over mix making the biscotti not hold their shape!
  7. Separate the dough into 2 and roll into a large log on 2 separate baking trays
  8. Flatten down until both are long, rectangular and around 1/2cm thick 
  9. Score, (This means cut but not the whole way!) the dough every 4cm width ways not length ways- this will make it easier to cut them when they are cooled but do not worry if you forget this step!
  10. Bake for 15 minutes
  11. As soon as they are out of the oven cut them on the score line but DO NOT move them!
  12. Leave the them to cool for around 45 minutes.
  13. Enjoy!!
