Chicken & Egg Fried Rice
Whilst a lot of my blog is sweet treats and desserts I actually also love cooking savoury dishes. I've always enjoyed making single serve lunches and dinners (mainly because I have very different taste buds to the rest of my family!) but of course have to factor in things I wouldn't factor in normally such as time, price (although I consider price when baking it often doesn't determine any ingredients or methodology) and balance of multiple food groups as I like my meals to incorporate multiple vitamins and macro-nutrients. I also love to make my meals colourful with multiple different vegetables! Therefore, for me, cooking a perfect dish is harder than one may originally assume. This recipe for egg fried rice is easy, not too expensive, healthy and most importantly delicious. It incorporates most of my favourite vegetables and is one of my much loved dishes when coming home from a long day at school. It takes around 20-30 minutes to make and is always my go-to dish when I'm home alone- yes, I am aware most normal teenagers would just make toast or instant noodles but this dish just does the trick for me! I hope this recipe satisfies your taste buds as much as it does mine!
Here is my recipe for Chicken & Egg Fried Rice:
Ingredients: (Serves 1)
- 2 Frozen Chicken Breasts (about 200g)
- 5g Sesame Oil
- 20g Hoisin Sauce
- 1/2tsp Everything Bagel Seasoning (this can be substituted for Sesame Seeds)
- 1/2tsp Crush Garlic (I buy this pre-bought)
- 1/2 tsp Cumin
- 1/2 tsp Ginger
- 1/2 tsp Turmeric
- 1/2 tsp Paprika (in case you haven't noticed I like lots of Spices
- 100g Mushrooms, Sliced
- 60g Sugar Snap Peas/Regular Peas, Sliced
- 100g Carrots, Sliced
- 100g Sweet Corn
- 50g Egg Whites
- 60g Microwave Rice (You can use regular rice but I prefer to use microwaved!)
Method:
- Place your chicken breasts in the oven at 180'c, gas mark 4 and cook for 25-30 minutes
- In a small glass, mix the oil, hoisin sauce, everything bagel and crushed garlic
- Pour your oil mixture into a large pan on a low heat on the hob, leave for 5 minutes
- Turn the hob onto medium heat, add your vegetables onto the hob and mix into the oil mixture until fully coated,
- Add in all your spices and continue to mix
- Turn the hob onto a lower light and leave for 10 minutes
- Make a well in the centre of the pan and add your egg whites, leave for 30 seconds or until just turned white,
- Quickly mix the vegetables into the egg white so it doesn't stick then add your rice
- Leave on a low light until the chicken is cooked
- When the chicken is cooked, cut it into small cubes and add to the pan
- Turn the hob onto a medium light and fry the dish over for 2-3 minutes
- Serve hot with more sesame seeds (optional)
