Cheesy Crackers
I don't care what anyone else says but I will always choose a savoury snack over a sweet snack. Whilst I do love cookies (who doesn't!) I would much rather have something salty or savoury as I find it more satisfying as well as tastier. I have always been a big fan of cheese and cheesecake but funnily enough, never loved cheese flavoured snacks such as crisps. However, when coming across a cheese crackers recipe recently I thought I would try it and let me tell you I'm so glad I did. The texture of these delightful goodies is similar to pastry yet not to indifferent from a shortbread. The cheese flavour isn't too overpowering and is balanced out nicely by the almost shortcrust pastry texture. They are truly wonderful and so so easy! You can generally make these crackers into any shape but I decided on unicorns, men and hearts (that famous combination!) so my family can choose based on how hungry they are. I hope this recipe makes you smile as much as it did for me!
Here is my recipe for Cheesy Crackers:
Ingredients: (Makes 20-30 crackers)
- 225g Cheese, grated (I used Mature Cheddar but most cheeses will work)
- 60g Butter
- 1tsp Salt
- 125g Plain Flour
- 1tbs Icy Water
Method:
- Preheat the oven to 175’c, gas mark 4
- In a bowl, melted the cheese and butter until stretchy but not totally melted (about 1 minute on medium in the microwave!)
- Add the salt, water and flour and mix to form a dough
- Roll the dough out on the work top (you shouldn't need to dust the work top but you can if you prefer) and roll until the dough is about 0.5cm thick
- Cut out shapes of your choice and place on a baking tray 2cm apart from each other
- Bake for 10 minutes
- Enjoy!!
