Vegan S'more Cookies

Heya,

Who doesn't love a s'more?! the sweet gooey texture of the melted chocolate and marshmallows squished between cookies. Like a little mouthful of heaven, Its fair to say they are delcious. However, they are also incredibly messy. To avoid the annoyance of my parents when I test messier recipes I thought I'd try making s'mores as a cookie. I know from working with marshmallow fluff before that is makes the most incredibly light almost stretchy texture so knew it would work well. However it's overpoweringly sweet flavour is balanced out by the dark chocolate chips making the overall cookie perfect. I love making this recipe as its so much fun to knead all the "s'more mixture" into the dough, especially when the smell of marshmallow and memories of singing around a bonfire come through. I hope you love this recipe as much as I love making them!

Here is my recipe for Vegan S'more Cookies:

Ingredients: (Makes 12)

  • 100g Brown Sugar
  • 150g Vegan Butter
  • 180g Plain Flour
  • 30g Marshmallow Fluff
  • 15g Lotus Biscoff Spread
  • 6 Lotus Biscuits, crushed
  • 50g Mini Vegan Marshmallows
  • 90g Dark Chocolate Chips

Method:

  1. Preheat the oven to 175’c, gas mark 4
  2. In a large bowl, cream together the butter and sugar until smooth
  3. Add the flour, marshmallow fluff and biscoff spread and continue to stir until a dough forms
  4. Add the biscuits, marshmallows and chocolate chips and knead like bread
  5. Roll into 12 balls and cook for 15-18 minutes
  6. Enjoy!!
