Vegan Oreo Brookies

Heya,

I get a lot of pleasure for baking for my friends and family- I even love the honesty of my best friends and brother when bakes don't taste up to standard! Recently, my best friend has gone dairy free (like me!) so wanted to make something for my friends that she could enjoy as well. I have never found an amazing dairy free cookie recipe so thought I would have more luck with a vegan one as veganism seems to be more common than dairy allergies. I often make brookies for my friends and they always go down a treat (even though my brother weirdly doesn't like them) so thought it would be fun to try making them vegan. I would say the experiment was successful and the Oreos improved this scrumptious bake greatly. It has always surprised me that Oreos are vegan as the filling is so creamy so when I did Veganuary in 2019 it isn't an exaggeration to say I was overjoyed. I hope this recipe makes you smile as much as my friends when I surprised them with these last Monday morning!


Here is my recipe for Vegan Oreo Brookies:


Ingredients: (Makes 18)

  • 165g Vegan Butter, softened
  • 50g Caster Sugar
  • 150g Brown Sugar
  • 2tsp Vanilla Extract
  • 200g Plain Flour
  • 90g Hot Chocolate Powder (surprisingly the Cadbury's one is vegan)
  • 1/2tsp Baking Soda
  • 3/4tsp Baking Powder
  • 1/2tsp Cornflour
  • 60g Milk Chocolate Chips
  • 18 Oreos

Method:

  1. Preheat the oven to 175’c, gas mark 4
  2. In a large bowl, cream together the butter and both sugars until smooth
  3. Add the vanilla and continue to mix
  4. Sift in the flour, hot chocolate powder, baking powder, soda and cornflour and knead like bread until a dough forms
  5. Add the chocolate chips
  6. Refrigerate for up to an hour
  7. Roll into 18 balls and place on a tray 3cm apart- they spread a lot!
  8. Press an Oreo firmly into the centre of the dough being careful not to break it
  9. Bake for 8-10 minutes
  10. As soon as you take the trays out the oven, press on the Oreos firmly to ensure they are stuck properly into the biscuit.
  11. Enjoy!!
