Single Serve Chocolate Chip Cookie
Its fair to say I bake incredibly frequently. This means there is usually a fresh supply of biscuits or cake for me and my family to enjoy over the week. However, on the rare occasion that we have no baking, I like to make this simple treat for my brother's dessert after dinner- of course he can't go without a much needed sweet treat! Many people have heard of a mug cake which is simply a single serve cake you put in the microwave but I've always thought "why not a cookie?" Making single serve bakes requires incredibly specific measurements and in my days of experimenting, I made countless ones that were either too eggy, too sweet or even too chocolatey (not sure what that means!) I finally came up with this recipe where there is the perfect balance of everything even if I do say so myself! I use peanut butter to make this cookie more moist, as there is nothing worse than a dry cookie, however, any spread such as Nutella or Lotus Spread will also work fine. Here is my recipe for a Single Serve Chocolate Chip Cookie:
Ingredients: (Makes 1)
- 15g Butter, softened
- 1tbs Brown Sugar
- 1tbs Caster Sugar
- 1 Egg Yolk
- 1/4tsp Vanilla Extract
- 4tbs Plain Flour
- 1-2tsp Peanut Butter (you can use any spread) - optional but if you don't use a spread you may need to add slightly more butter
- a handful of Chocolate Chips - optional but highly recommended
Method:
- In a small bowl, mix all your ingredients together
- Roll into a ball and press firmly onto a plate
- Put in the microwave for 1 minutes 20 seconds - its as easy as that!
