Red Velvet & White Chocolate Cookies

Heya,

my favourite flavour in baking is and probably always will be red velvet. Whilst everyone believes that red velvet is basically chocolate I will always disagree. It has a sweeter more elegant taste and will always be my go to flavour in everything from cake to baked oats. Red velvet cupcakes are generally quite popular however I rarely see red velvet cookies in the supermarket or bakeries so wanted to create my own exquisite cookies. The recipe is relatively basic and is incredibly tasty and my only tip is "don't buy cheap red food colouring." When I bake for my friends I often buy cheaper ingredients as I buy them in bulk so it makes more sense and they always look and taste the same. However, I have learnt that this cannot be done with red food colouring. Cheap red food colouring is watered down and, whilst it may work in icing, doesn't work in any baking. I would always recommend spending slightly more money on red food colouring to ensure that vibrant cherry red flavour is prevalent. After all, if you don't then red velvet really is just boring chocolate cookies. I love this recipe so so much so I hope it brings you as much joy that it brings me! 




Here is my recipe for Red Velvet & White Chocolate Cookies:


Ingredients: (Makes 12)

  • 55g Butter, softened
  • 120g Caster Sugar
  • 1 Egg
  • 1tsp Almond/Vanilla Extract
  • 120ml Milk (I use almond)
  • 20g Cocoa Powder (or hot chocolate powder)
  • 125g Plain Flour
  • 1/2tsp Baking Soda
  • 1tbs Apple Cider Vinegar
  • 1tsp good quality Red Food Colouring (a cheap one will make the cookies brown not red)
  • 60g White Chocolate Chips

Method:

  1. Preheat the oven to 175’c, gas mark 4
  2. In a large bowl, cream together the butter and sugar until smooth
  3. Add the egg, almond extract and milk and continue to mix
  4. In a small cup, mix the baking soda and apple cider vinegar- make sure to leave it until it has finished bubbling
  5. Add the baking soda mixture to the bowl, followed by the red food colouring
  6. Sift in the flour and cocoa powder and mix until a dough forms- you may need to add more red food colouring if you are using a weaker one
  7. Add the chocolate chips and divide the dough into 12 balls
  8. Place on a baking tray(s) 2cm apart and bake for 10-12 minutes
  9. Enjoy!!
