Peanut Butter Stuffed Cookies
My brother loves peanut butter. And I don't just mean likes, I mean he would eat it 3 meals a day everyday if he could. Of course this means I bake relatively frequently with peanut butter in a wide variety of sweet treats. Whilst not being a fan of the spread myself, I believe I have perfected this particular peanut butter dessert and my stuffed cookies have become increasingly popular. The surprise element of receiving a regular looking cookie, biting into it and finding a delicious stuffing is a joy for many making this recipe one of my most populars. the combination of chocolate chips and peanut butter gives these biscuits what my brother would describe as a "Reeses flavour" but not overpoweringly sweet. You could even switch up the spreads if you aren't a fan of peanut butter and use something such as chocolate spread (or even jam!) for the filling. Here is my recipe for Peanut Butter Stuffed Cookies:
Ingredients: (Makes 24)
- 200g Butter, softened
- 150g Brown Sugar
- 100g Caster Sugar
- 1tsp Vanilla Extract
- 2tbs Milk (I use oat)
- 1 Egg
- 300g Plain Flour
- 1/4tsp Baking Powder
- 1/4tsp Baking Soda
- 60g Milk Chocolate Chips
- 240g Smooth Peanut Butter (you can use crunchy but it wont pipe as well)
Method:
- Preheat the oven to 175’c, gas mark 4
- In a large bowl, cream together the butter and both sugars until smooth
- Add the vanilla, milk and egg and continue to mix
- Sift in the flour, baking powder and soda and mix until a dough forms
- Add the chocolate chips and refrigerate for at least an hour
- When cooled, make 24 balls of cookie dough and flatten slightly
- Pour the peanut butter into a piping bag with a writing style nozzle
- Pipe a 2tsp sized amount of peanut butter into the centre of each piece of dough and enclose it
- Place each piece of dough 2cm apart on baking trays and bake for 10-12 minutes
