Cosmic Brownie Baked Oats

As a baker, over lockdown I would say I tried every baking related Tiktok trend. From banana bread to Cloud bread, vodka pasta to natures cereal I have definitely experimented with a large proportion. However, my favourite was definitely BAKED OATS! I have tried countless recipes in order to perfect the texture, flavour and presentation and think I have finally come up with the best. Whilst not overpoweringly sweet, this oats recipe has a cake like fluffy texture and is the perfect excuse to eat cake for breakfast. I think everyone has their own baked oats recipe but I will (not arrogantly) class mine as the best! I have been baking with marshmallow fluff for a while in cookies and cake as well as oats however many people have not actually heard of it. As well as this sticky goodness being delicious, it also creates the most lovely and fluffy texture in bakes and would highly recommend using it. I would have baked oats everyday for breakfast if I had the time perhaps trying a new flavour everyday. Whilst many would argue this doesn't look like the healthiest of breakfasts I would disagree and a treat once in a while never hurt anyone! I hope you love this recipe as much as I do.



Here is my recipe for Cosmic Brownie Baked Oats:


Ingredients: (serves 1)

  • 40g Rolled Oats
  • 1/2tsp Baking Powder
  • 1/2tsp Almond/Vanilla Extract
  • 100ml Milk (I use Almond)
  • 30ml Egg Whites
  • 15g Chocolate Protein Powder (I use the PHD Chocolate Cookie Protein)
  • 12g Marshmallow Fluff (any spread such as Peanut Butter will also work but I like the fluffy texture the marshmallow fluff gives!)
  • 8g Colour Sprinkles

Method:

  1. Preheat the oven to 175’c, gas mark 4
  2. In a blender, blend everything aside the sprinkles until a cake batter like texture forms
  3. Pour into your ramekin and add the sprinkles 
  4. Bake for 16-18 minutes 
  5. Enjoy!! (its as easy as it sounds)
