"Avocado" Shortbreads

Heya,

Avocado has become one of the trendiest food in the western world being the perfect thing on toast, in smoothies or even as a pasta sauce. I've been eating avocados since I was born (trend setter I know!) but love using them in my savoury recipes as their creamy texture and simply fresh flavour makes them the perfect addition to any dish. Recently, I made avocado brownies, and whilst my family did like them we all agreed we preferred normal brownies. Don't worry! I'm not about to give you a recipe for biscuits with avocado in them because honestly I think that would be disgusting. However, after looking on one of my favour baking websites, https://bakerlogy.com/  I found an avocado cookie cutter and simply knew I had to try making avocado shaped cookies. They are simply my normal shortbread recipe, although the "stone" is chocolate flavour, therefore still have their buttery taste but I would say the extra care with presentation really makes the difference. I have tried and tested countless alternatives for green food colouring including matcha and even mint purée however the flavour of my original shortbreads is already perfect therefore I honestly don't see the point in changing or meddling with the it. I hope you have as much fun making these scrumptious shortbreads as I always do!



Here is my recipe for "Avocado" Shortbreads:


Ingredients: (Makes 28)

  • 200g Butter, softened
  • 100g Caster Sugar
  • 300g Plain Flour
  • 1tsp Green Food Colouring
  • 1tbs Cocoa Powder

Method:

  1. Preheat the oven to 175’c, gas mark 4
  2. In a large bowl, cream together the butter and sugar until smooth
  3. Sift in the flour and mix well until a dough forms
  4. Separate the dough in an 9:1 ratio and colour the larger fraction with the green food colouring and the smaller fraction with the cocoa powder
  5. Using a cookie cutter, cut the green dough into 28 avocado shaped pieces and the brown dough into small circles
  6. Carefully place the brown circles on top of the avocados and place them on trays - they won't spread but still need to be about half a centimetre apart.
  7. Bake for 8-10 minutes
  8. Enjoy!!
