Quartet Cookies

Heya,

When it comes to baking, I would say I’m better at cookies compared to cake. Over the years I have been searching for the best cookie “base” recipe which I believe I have finally found. It’s not too sweet, but doesn’t lack flavour, as well as chewy but crunchy, crispy yet gooey- I would say my cookie base recipe is perfect. When it comes to experimenting further this recipe is definitely a favourite amongst my friends most likely as I don’t tend to use the same ingredients twice. Quartet cookies have been one of my newer experiments and are so easy to make as well as make your own unique combination. The flavours I have chosen are the ones I feel complement each other best however you can use almost anything from peanut butter to hobnobs providing you use a regular amount and take texture into account. I always get so many compliments for this recipe and have people running up to me telling me to use X flavour next time. Since I first made this recipe, I have tried around 90 different combinations most of which are delicious (including a rather unusual pringle flavour!) 



Here is my recipe for Quartet Cookies:


Ingredients: (makes 24)

The cookies:

  • 200g Butter, softened
  • 100g Brown Sugar
  • 150g Caster Sugar
  • 2tbs Milk of Choice (I use Oat)
  • 1tsp Almond/Vanilla Extract
  • 1 Egg
  • 300g Flour
  • 1/2tsp Baking Powder
  • 1/2tsp Baking Soda

The Quartets: (this is my preference however you can use a similar quantity of any flavour!)

  • 8 Oreos, crumbled + ¼ per cookie for the top
  • 10 Lotus Biscuits, crumbled + ¼ per cookie for the top
  • 12 Party Rings, crumbled + ¼ per cookie for the top
  • 2tbs Hot Chocolate Powder
  • 75g Chocolate Chips of choice (I use white)


Method:

  1. Preheat the oven to 175’c, gas mark 4
  2. In a large bowl whisk together the butter and both sugars until fully combined
  3. Add the milk, extract and egg and continue to whisk
  4. Fold in the flour, soda, and powder until a stickish dough forms
  5. Divide the dough into 4 and flavour each quarter however you please
  6. Divide each dough into 24 small balls
  7. Take a ball from each of the flavoured doughs and roll together into a ball
  8. Place each mixed ball on a greased baking tray around 2-3cm apart as they will spread
  9. Top each cookie with your toppings of choice and press down lightly
  10. Bake for 8-10 minutes
  11. Enjoy!!
