Nutty Cinnamon Swirl Banana Bread

Heya,

Unlike me, who always manages to have enough time in the morning to make an OTT breakfast taking both presentation and deliciousness into account! my family are generally rushed so I have recently got into the habit of making breakfast loafs for them to enjoy quickly before rushing out the door. As they have someone in the family who will bake everyday if she couls, my family can afford to be relatively picky and are therefore generally quite honest when I mess something up (of course they complement the good stuff as well!). over lockdown, like many, I experiment with lots of different banana bread recipes, and whilst I’m not a massive fan myself, my family declared this one the best. According to my parents the nutty oat flavour combined with the yummy banana texture work perfectly together and this loaf is often gone within a matter of days. The recipe is super easy and a perfect way to get your serotonin levels up before a long working day ahead. The cinnamon swirl throughout the loaf adds masses of flavour without being overpowering compromised by the squidgy texture that a banana loaf so often has.

Here is my recipe for Nutty Cinnamon Swirl Banana Bread:

Ingredients: (makes 10 slices)

  • 2 Eggs
  • 100g Caster Sugar
  • 75g Brown Sugar + extra for sprinkling
  • 120g Greek Yoghurt
  • 2 Bananas, mashed
  • 30g Butter, melted
  • 180g Plain Flour
  • 1tsp Baking Powder
  • 1tsp Baking Soda
  • 1.5tsp Cinnamon 
  • ¼ tsp Nutmeg
  • 50g Almonds Slithers
  • 50g Chopped Walnuts
  • -25g Chocolate Chips (optional)
  • 25g Cinnamon Sugar for sprinkling
  • 20g Oats for sprinkling


Method:

  1. Preheat the oven to 175’c, gas mark 4
  2. In a large bowl, mix the eggs and both sugars until fully combined
  3. Add the yoghurt and banana and continue to stir
  4. Gently add in the butter trying to avoid splashing
  5. Sieve in the flour, powder and soda and mix until combined
  6. Add in all the spices and keep mixing!
  7. Fold in the nuts and chocolate chips 
  8. Place about 1/3 of your mixture into a greased loaf tin
  9. Add some of your oats, brown sugar, and cinnamon sugar
  10. Repeat steps 8 and 9 until you run out of mixture
  11. Top your loaf with oats, brown sugar, and cinnamon sugar or whatever your heart desires!
  12. Bake for 40 minutes making sure not to underbake it (unlike cookies, raw cake is manky!)
  13. Enjoy!!
