3 Layered Brookie Cupcakes

Despite not being a favourite in my family, if I asked my friends to choose their favourite of my bakes, they wouldn’t be hesitant in choosing these delicious brookie cupcakes. I think it is because there are so many components to them s what is not to like! The original recipe for this delightful treat makes 1 large brookie rather than cupcakes however after adapting the recipe and making it my own I have found it works better as cupcakes- especially during COVID times as I am only allowed to bring individually done bakes into school. One thing that originally surprised me about this recipe was the fact that you put cream cheese in the cookie dough layer as this seemed rather unusual. However, a further investigation led me to see that the cream cheese acts similar to corn-starch in the sense that it binds everything together nicely without affecting the flavour too much. Therefore, whilst you may think “no way am I adding cream cheese- that would be gross,” don’t be alarmed nor leave it out as it is incredibly important. In terms of the centre biscuits, whilst I will always use an Oreo, any small circular biscuits (eg: a Maryland or party ring) will all work nicely.
Here is my recipe for 3 Layered Brookie Cupcakes:
Ingredients: (makes 24)
The Cookie Dough:
- 110g Butter, softened
- 4oz Cream Cheese
- 50g Caster Sugar
- 75g Brown Sugar
- 1 Egg
- 1tsp Vanilla Extract
- 250g Plain Flour
- 1/2tsp Baking Soda
- 1/2tsp Baking Powder
- 24 Oreos (for the centre)
The Brownie Batter:
- 4oz Semisweet Chocolate, melted
- 150g Butter, melted
- 375g Caster Sugar
- 3 Eggs
- 1tbs Vanilla extract
- 2tbs Cocoa Powder
- 120g Plain Flour
- 75g Chocolate Chips (optional but recommended!)
Method:
- Preheat the oven to 175’c, gas mark 4
- To make your cookie dough, cream the butter and cream cheese together in a bowl
- Add the sugars and egg and continue to mix
- Mix in the vanilla
- Knead in the flour, baking powder and baking soda with your hands until a cookie dough forms
- Set aside
- To make the brownie batter, microwave the butter and chocolate in 30 second intervals until fully melted
- Add the sugar, egg and vanilla and mix well
- Fold in the salt and cocoa powder
- Sprinkle in your chocolate chips
- To assemble the cupcakes, divide the cookie dough into 24 balls and flatten each at the bottom of your cupcake case
- Place an Oreo (or similar shaped biscuit such as a party ring) on top and press down firmly
- Place around 1tbs of your brownie batter on top of the Oreo or until you have used up all the mixture
- Bake for 35 minutes or until the brownie batter is cooked through (the cookie dough may be a little raw but that is fine)
